Preparation time: 30 minutes
  • For the fish:
    • 400g whiting fillet,
    • olive oil,
    • 1 lime,
    • 1 coffee spoon cumin powder,
    • 1 pinch chilli,
    • salt and pepper
  • 12 tortillas,
  • 2 lettuce hearts,
  • 100g cherry tomatoes,
  • 1 red onion,
  • 1 pepper (yellow or red),
  • fresh coriander,
  • 1 small can of corn
  • Optional: pomegranate seeds and hot sauce.
  • For the mayonnaise:
    • 100g mayonnaise,
    • 1 lime,
    • fresh coriander,
    • 1 avocado,
    • 1 pinch chilli,
    • salt and pepper
  • Season the whiting fillet with cumin, chilli, salt and pepper. Heat the oil in a pan.
  • Fry the fish. When the fish is done, add the juice of half a lime.
  • For the garnish, finely chop the lettuce hearts, cherry tomatoes, pepper, red onion, and coriander.
  • Add the zest and remaining juice of the lime to the mayonnaise. Use a hand blender to mix it with the flesh of the avocado, the chilli, and the coriander.
  • Heat the tortillas for 20 seconds in a hot oven or microwave.
  • Top with pieces of the fried whiting, the vegetables, and lime mayonnaise. Optionally, garnish with the pomegranate seeds and the hot sauce.
