Summer tacos with whiting and lime mayonnaise

- For the fish:
- 400g whiting fillet,
- olive oil,
- 1 lime,
- 1 coffee spoon cumin powder,
- 1 pinch chilli,
- salt and pepper
- 12 tortillas,
- 2 lettuce hearts,
- 100g cherry tomatoes,
- 1 red onion,
- 1 pepper (yellow or red),
- fresh coriander,
- 1 small can of corn
- Optional: pomegranate seeds and hot sauce.
- For the mayonnaise:
- 100g mayonnaise,
- 1 lime,
- fresh coriander,
- 1 avocado,
- 1 pinch chilli,
- salt and pepper
- Season the whiting fillet with cumin, chilli, salt and pepper. Heat the oil in a pan.
- Fry the fish. When the fish is done, add the juice of half a lime.
- For the garnish, finely chop the lettuce hearts, cherry tomatoes, pepper, red onion, and coriander.
- Add the zest and remaining juice of the lime to the mayonnaise. Use a hand blender to mix it with the flesh of the avocado, the chilli, and the coriander.
- Heat the tortillas for 20 seconds in a hot oven or microwave.
- Top with pieces of the fried whiting, the vegetables, and lime mayonnaise. Optionally, garnish with the pomegranate seeds and the hot sauce.
